The bananas add natural sweetness and moisture, while the caramel elevates the cake to a whole new level of decadence. Perfect for any occasion, this cake will be the highlight of your dessert table.

Ingredients

Scale

For the Cake:

    • 3 ripe bananas, mashed

    • 2 ½ cups all-purpose flour

    • 1 ½ tsp baking powder

    • 1 tsp baking soda

    • ½ tsp salt

    • 1 cup granulated sugar

    • ½ cup brown sugar

    • ¾ cup unsalted butter, softened

    • 3 large eggs

    • 1 tsp vanilla extract

    • 1 cup buttermilk

    • 1 cup caramel sauce (plus extra for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C). Coat two 9-inch round cake pans with butter and flour, or line them with parchment paper for easy removal.
  2. Mash the bananas in a bowl until smooth and set aside. The bananas should be ripe for the best flavor and moisture.
  3. Mix dry ingredients: In a separate bowl, combine the all-purpose flour, baking powder, baking soda, and salt by whisking them together.
  4. Cream butter and sugars: IIn a large mixing bowl, beat the softened butter with granulated sugar and brown sugar until the mixture is light and fluffy. This usually takes about 3 minutes.
  5. Add eggs and vanilla: Incorporate the eggs one at a time, making sure each is fully mixed in before adding the next. Then, stir in the vanilla extract.
  6. Combine wet and dry ingredients: Add the mashed bananas to the creamed butter mixture, followed by the dry ingredients in three additions, alternating with buttermilk. Begin and end with the dry ingredients, mixing until just combined after each addition.
  7. Bake the cake: Pour the batter evenly into the two prepared cake pans. Smooth the tops and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cakes: Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  9. Assemble the cake: Once the cakes have cooled, spread a layer of caramel sauce over the top of one cake layer. Place the second cake layer on top, and drizzle with more caramel sauce for a luxurious finish.

Notes

  • Banana Ripeness Matters: Use overripe bananas for the best flavor and moisture in your Heavenly Banana Caramel Cake. The riper the banana, the sweeter and more flavorful it will be.
  • Moisture and Flavor: To keep the cake moist, be sure to add buttermilk as the recipe suggests, or substitute with a homemade version by adding vinegar to regular milk for a similar tangy effect.
  • Storage Flexibility: This cake can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for up to 2 months. Simply thaw and enjoy at your convenience!
