Description

Chicken Kiev is a delightful dish that features a juicy chicken breast filled with aromatic herb butter, coated in crispy breadcrumbs, and fried to golden perfection. This classic Eastern European recipe combines the richness of butter, the freshness of herbs, and the satisfying crunch of breadcrumbs, creating a culinary treat that’s perfect for special occasions or a family dinner.

Ingredients

For the Herb Butter:

    • Butter: 1/2 cup, softened

    • Garlic: 1 clove, minced

    • Fresh Parsley: 1 tablespoon, chopped

    • Fresh Tarragon: 1 tablespoon, chopped

    • Lemon Zest: 1 teaspoon

    • Salt: 1/2 teaspoon

    • Black Pepper: 1/4 teaspoon

For the Chicken:

    • Chicken Breasts: 4, boneless and skinless

    • All-Purpose Flour: 1 cup

    • Eggs: 2 large, beaten

    • Panko Bread Crumbs: 2 cups

    • Salt and Pepper: To taste

    • Vegetable Oil: For frying

Instructions

    1. Prepare the Herb Butter:
        • In a small bowl, mix together the softened butter, minced garlic, chopped parsley, chopped tarragon, lemon zest, salt, and black pepper until well combined.

        • Place the mixture on a piece of plastic wrap and form into a log. Refrigerate until firm, about 1 hour.

    1. Prepare the Chicken:
        • Place each chicken breast between two pieces of plastic wrap and pound with a meat mallet to about 1/4 inch thickness.

        • Season each breast with salt and pepper.

        • Place a slice of the chilled herb butter in the center of each flattened chicken breast. Fold the edges over the butter, sealing it completely, and secure with toothpicks if necessary.

    1. Bread the Chicken:
        • Dredge each stuffed breast in flour, shaking off the excess.

        • Dip into beaten eggs, then coat thoroughly with panko breadcrumbs, pressing to adhere.

    1. Fry the Chicken:
        • Heat vegetable oil in a large skillet over medium heat.

        • Carefully place the breaded chicken breasts in the hot oil and fry until golden brown on all sides and cooked through, about 4 minutes per side.

        • Drain on paper towels to remove excess oil.

    1. Serve:
        • Take out any toothpicks, cut each Chicken Kiev in half, and serve right away to savor the herb butter as it oozes out when sliced.
