Ingredients

Scale

For the Doughnuts:

    • 3 cups all-purpose flour

    • 2 1/2 tsp instant yeast

    • 1/4 cup granulated sugar

    • 1 1/2 tsp kosher salt

    • 1/4 cup potato starch (optional, for extra softness)

    • 3 tbsp unsalted butter, room temperature

    • 1 cup buttermilk, room temperature

    • 1 large egg, room temperature

For Frying:

    • 6 cups vegetable oil

For the Pastry Cream:

    • 2 cups whole milk

    • 1/2 cup granulated sugar

    • 5 large egg yolks

    • 1/2 tsp kosher salt

    • 1/4 cup cornstarch

    • 2 tbsp unsalted butter, softened

    • 1 tbsp pure vanilla extract

For the Chocolate Glaze:

    • 1 2/3 cups confectioners’ sugar, sifted

    • 1/4 cup Dutch process cocoa powder, sifted

    • 1/4 cup whole milk

    • 1 1/2 tsp pure vanilla extract

Instructions

    1. Prepare the Doughnuts:
        • In a large bowl, combine the flour, yeast, sugar, salt, and optional potato starch. Add the butter, buttermilk, and egg, and mix to form a dough.

        • Knead the dough on a floured surface for about 8-10 minutes, or until smooth and elastic.

        • Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.

    1. Make the Pastry Cream:
        • In a medium saucepan, heat the milk and sugar over medium heat until the sugar dissolves and the milk is warmed.

        • In a separate bowl, whisk together the egg yolks, salt, and cornstarch until smooth.

        • Slowly add the warm milk to the egg mixture, whisking continuously. Pour the mixture back into the saucepan and cook over medium heat, whisking constantly until it thickens, about 5-7 minutes.

        • Take the mixture off the heat and whisk in the butter and vanilla extract. Let the pastry cream cool before transferring to the fridge to set for at least 1 hour.

    1. Fry the Doughnuts:
        • Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C).

        • Flatten the dough on a surface dusted with flour to a thickness of about 1/2 inch. Use a doughnut cutter or two round cutters (one larger and one smaller) to cut out doughnut shapes.

        • Carefully fry the doughnuts in batches for 2-3 minutes per side, or until golden brown.

    1. Fill the Doughnuts:
        • Once the doughnuts have cooled slightly, use a piping bag or a small knife to create a hole in the side of each doughnut.

        • Pipe the chilled pastry cream into the center of each doughnut, filling them generously.

    1. Make the Chocolate Glaze:
        • In a medium bowl, whisk together the confectioners’ sugar, cocoa powder, milk, and vanilla extract until smooth and glossy.

        • Dip the tops of each filled doughnut into the chocolate glaze, ensuring the tops are fully covered.

    1. Serve and Enjoy:
        • Let the chocolate glaze set for a few minutes before serving. Enjoy your homemade Boston Cream Doughnuts fresh, or store them in an airtight container for up to 2 days.

Notes

  • Room Temperature Storage: Store doughnuts in an airtight container at room temperature for up to 2 days.
  • Refrigeration: Due to the pastry cream filling, keep the doughnuts in the fridge for up to 3 days. Store them in an airtight container to prevent them from drying out.
  • Freezing: To freeze, place the doughnuts on a baking sheet to freeze individually, then transfer to a freezer-safe container. They can be stored in the freezer for up to 1 month.
  • Reheating: To refresh doughnuts, reheat them in a warm oven at 300°F (150°C) for 5-10 minutes to restore their softness.
